In My Kitchen

You’ve probably figured out by now that I love fall. Love it, love it, love it. One of my favorite things about this time of year is the food (surprising, I know). So today I’ve got a few of my favorite fall recipes for you.

Apple Muffins:

I just made these last week for the first time and decided this recipe is going into my favorites file. Here’s the link to the recipe. My changes: I decreased the sugar (slightly) and I didn’t have apple juice on hand so I substituted with orange juice and it was delish. I also had a few walnuts leftover from another recipe so I folded those into the batter. Really, really good and full of fall-ish flavors.

Stuffed Acorn Squash:

2-3 large acorn squash.  Cut in half and remove seeds and strings.  Place cut side down on lightly greased baking sheet.  Bake at 350 for 40-50 minutes.  Remove from oven and set aside.

Stuffing:

1 pound sausage, 1 onion (diced), 1 apple (diced), 2 cups toasted bread cubes, 3/4 cup nuts, 3/4 cup raisins (I use Craisins), 1 Tablespoon sour cream or plain yogurt, pinch basil, pinch oregano.

Brown sausage, add onion and apple and saute just until tender.  Remove from heat.  Add remaining ingredients and stuff into cooked squash, cover and bake at 375 for 20 minutes.


Pumpkin Pancakes:

The kids didn’t have school on Friday which meant we all slept in and enjoyed a lengthy morning in our pajamas.  I wanted to make pancakes and decided to do pumpkin pancakes because it’s fall, I love pumpkin, I love pancakes, and it just seemed like the right thing to do.  I used the very first recipe that Google provided and it was a winner.  Here’s the link.
