Holiday Baking. Is it Supposed to be Fun?

See this picture? Peppermint Whoopie Pies.  Made with real butter.   Never had one? Sorry ’bout that.

I found it in a magazine and it inspired me to make them as gifts. My intentions were good, but I failed to take a few things into consideration:

1. My oven is not full size. I don’t think I’ve ever whined on my blog about my kitchen. Overall, it’s functional enough except for the fact that my oven is too small and doesn’t fit a full size cookie sheet. The recipe I used for these whoopie pies made approximately 4.73 zillion pies. I could only bake 6 at a time.

2. Whoopie pies are a lot of steps. First the batter, then the baking, then the filling, then the assembly, then individually wrapping them.   Oh, and somewhere in there I had to unwrap way too many candy canes and crush them up into manageable pieces, then roll the edges of the whoopie pies into those pieces and by the end I was a sticky mess!  And the recipe I used made approximately 4.73 zillion pies.

I didn’t have my camera with me while I was baking (Conrad took it to work with him). But if I’d had it I would have taken a picture of myself and it would have looked a whole lot like this:

What was I thinking?

I debated whether or not to post the recipe here.  I would hate to be responsible for ruining someones perfectly joyous holiday spirit.  But in the end, I decided if anyone is dumb brave enough to take on this project, then the least I can do is provide a good recipe.   So here it is.  The good news is, they taste really good.  The bad news?  Well, I think you get it.

Whatever you do, keep the holiday spirit alive.  I know I am.

    1. i feel your pain about the oven. this house has a full size oven (with 3 racks! the luxury!) and i am overjoyed after years of baking in a tiny oven with one shelf. have you checked craigslist or something similar for a “new” oven?

    LOL. Thanks Vicki, this gave me a great laugh today. I have taken on similar projects in the past. Now I do very little baking, especially at Christmas time when there is so much else going on. I agree, the picture in the magazine looks amazing, and they look really tasty! At least they tasted good, what a bummer if they hadn’t! I hope you have a wonderful Christmas with your family!

    Ahh, I feel the frustration of a small oven. Question is: can you do a turkey in it? At least the cookies were yummy. I’ve been thinking of doing some this week. Hmmm…maybe half a recipe! :)
